The band Queen Adreena does a super-spooky version of "Pretty Polly" on their album Taxidermy. Makes the hairs on the back of my neck stand up.
Then there's the excellent Kristen Hersh CD of Appalachian covers called Murder, Misery and Then Goodnight. "All the Pretty Horses" is achingly beautiful on that one.
