I've had good success with an AKG C2000 microphone. In post-processing, I always add the multiband compressor of Cubase with the "acoustic guitar" settings, which I think has a greater compression ratio on mid frequencies. It helps a lot at boosting the overall level of the recorded track and the default settings for acoustic guitar do the job. Some reverb is also needed if you record in a room which does not have natural reverb. Best results are sometimes found when I record in a very small room (say the bathroom) which has a lot of intrinsic reverb.
I find it it the most satisfactory setup. Recording from my piezo pickup I get less feel and attack. When possible (i.e. no background noise, good microphone, good guitar) I prefer to go with a microphone rather than recording the output of the piezo.

lol Honestly, just turn the mics up really high, and record from a few feet away. Acoustic guitars sound better in lo-fi music anyway.

I just wanted to say hello. I've had several acoustics over the years. Today I own two Martin's - a D-28 and a D-1. Believe it or not the D-1 is my favorite. I love the way it looks and sounds. I also enjoy writing songs but haven't written any in a long time...it seems i sort of drifted into writing poetry. i'm happy to be a member of this group.
more later,

Acoustic guitar lovers should have a look at the band from Quebec named Harmonium which existed in the 70s. Leader Serge Fiori wrote amazing and inspired acoustic guitar songs. Lyrics are in french, but the focus is on music. They made a concert in California once. They are the object of a cult here in Quebec, and many think nothing has been made ever approaching this level of musical quality since.
