I enjoy food.
I love eating at fancy/upscale places, as well as just finding quality yumminess in unexpected places. The only reality show I’m willing to watch? Top Chef. When my parents come to visit, they have been known to say “Kevin, we come to Austin, and all we do is eat!”
As a triathlete, I have a metabolism “like whoa.” So, today, when I received the newsletter from Meredith Terranova and saw an apple pie recipe staring me in the face, I immediately wanted to devour it (I didn’t have breakfast, and I’ve been looking forward to lunch since 10:00).
This brings me to the point of this post. Meredith has lots of great recipes (some are available here). I see recipes and go to places like Whole Foods and think to myself that I want to devote more time and pay more attention to the things I eat. This will become especially important as I look toward an Ironman next year.
So, fellow triathletes and food-loving readers:
1) How do you prioritize preparing (and having available) healthy food?
2) How do you make it easy/fun?
3) How do you convince yourself to prepare something (and something wholesome and nutritious) when you’ve just finished your long run/ride?
