      <description><![CDATA[This is an evolved version of an earlier <a href="http://virb.com/sourjayne/posts/text/157771">post about soup</a>. I've thrown in some more ingredients to make a hearty cold-busting soup to help get through the cold & flu season.  I adopted it from a more traditional Thai-style recipe with what I had on hand.

<h3>Immunity-Boosting Chicken Coconut Soup
</h3>

<ul><li>3 cups chicken stock (buy good quality or make your own: chicken fat contains the antimicrobial palmitoleic acid to fight germs)</li><li>2 14oz cans of coconut milk (more or less: coconut oil contains lauric acid, which can kill viruses! Good stuff.)</li><li>1/4 cup chopped fresh ginger (also said to be antibiotic)</li><li>4 cloves garlic, lightly crushed (again, said to have powerful antiviral and antibiotic properties, and vitamin C)</li><li>1-2 tsp red pepper flakes (depending on your taste for spice. The spicier, the more disease-fighting and immune-boosting it will be.)</li><li>Salt, to taste</li><li>Handful of mushrooms, cut into bite-sized pieces</li><li>2-3 green onions, chopped</li><li>1 roasted chicken (I get them from the deli pre-cooked)</li><li>Juice from 1 lime (more vitamin C!)</li><li>a handful of fresh cilantro, chopped</li></ul>

Combine the chicken stock, coconut milk, ginger, garlic, and pepper flakes in a medium-sized pan. Bring to a simmer over medium heat, then reduce heat to low, and simmer for 15 minutes. Don't let it boil. Turn off heat, cover, and let broth steep for 30 minutes. 

Strain the liquid into a pan and discard the solids. Put the broth back on low heat and add salt to taste (and more pepper flakes if you want). Chop the meat from the chicken into bite-size pieces. Add the mushrooms, green onions, chicken, and lime juice. Serve hot, garnish with the cilantro.]]></description>
